This Recipe is adapted from Silver Ravenwolf’s Samhain Pumpkin Bread Recipe in “Halloween” and is one of my favourite recipes for Samhain.
1& 3/4 cups all purpose flour
1& 1/2 cup sugar
3/4 tsp salt
1tsp baking powder
1/2 tsp ground cinnamon
1/2tsp ground nutmeg
600g pre cooked pumpkin
1/3 cup water
2 large eggs
1 tsp vanilla extract
1/3 cup vegetable oil
1/2 cup chopped pecans
1.Combine all dry ingredients in a large bowl and mix well.
2.In a different bowl combine pumpkin, water, eggs, vanilla and oil. Mix well
3. Add the dry ingredients slowly to the second bowl and beat thoroughly.
4. Stir in nuts. And pour the batter into muffin trays
5. Bake at 180°C for 30-35 minutes
Makes around 14 cupcakes.
