Imbolc Recipe- Strawberry Almond Bread!

This Recipe is adapted from Candlemas by Amber and Azrael Arynn K, I couldn’t find Pecans or Cranberries, so I used Almonds and Strawberries instead:



1 1/2 cups fresh strawberries

2 cups flour

1 cup castor sugar

1 1/2 tsp baking powder

1 tsp salt

1/2 tsp baking soda

1 tsp grated orange peel

1/4 cup butter

3/4 cup orange juice

1 egg, well beaten

1/2 cup chopped almonds

Sift together the flour, sugar, baking powder, baking soda and salt.

Cut in the butter.

Mix together the egg, the orange juice and the grated orange peel.

Add the egg and juice mixture to the flour mixture until moistened.

Add in the nuts and strawberries last, fold them in.

Turn into a greased loaf pan, bake at 350F for around an hour or until the top is golden brown, and the toothpick (I had to use a knife lol) comes out clean.

Let cool for 30 minutes and serve!


I thoroughly enjoyed this bread, absolutely delicious!
